Creams add silky texture to this soup, emphasizing the sweetness of shallots and leeks, but accent the taste of mushrooms. Ingredients: 800 g. button mushrooms 200 g. shallots 200 g. leek 3 garlic cloves 400 g. cream (30%) 200 g. milk 2 springs of fresh thyme sea salt to taste 30 ml. cognac, then freshly ground black pepper to taste herbs of Provence to taste sugar to taste 50 ml. of olive olil 50 g. of unsalted butter Preparation: Clean mushrooms, cut into medium pieces. Chop leek, dice shallots into small cubes. Mince garlic, add mushrooms, thyme saute on high heat to golden brown. Season well, add cognac, flambeau.
