Top UK BBQ chef Richard Holden and Ian Hodgett from The Barbecue Shop here in store at Hayes Garden World show you that cooking on the BBQ by the beach or in the countryside need not be restricted to charred burgers and sausages. This tasty grilled lamb leg steak is marinated beforehand in a little rosemary, garlic, rapeseed oil, sea salt, ground black pepper and a little lemon zest. This can be left in the fridge overnight. Do this before you go out and then all you have to do is grill the steaks and serve with a green salad and baby new potatoes. Gently boil the potatoes beforehand then place in a plastic bag with some sea salt and rapeseed oil. Place them around the outside on the grill just before you start cooking the lamb then they will be heated through at the same time as the lamb is ready. Spray the grill with the Weber Non-stick spray then grill over the direct heat. Give them about a couple of minutes on each side with the lid down as cooking with the lid down reduces flare-up. For nice pink lamb aim for a temperature of 55 - 60C, use a digital temperature probe to make sure you take it off when it reaches the correct temperature and not when it has cooked to be too dry. Turn the lamb over when it releases easily from the grill, if it sticks give it another few seconds, this ensures the lamb is caremalised not charred.
